The most tender, succulent steak available exclusively at Quincy's. The steak comes from the middle loin or shortloin of the finest AAA Alberta beef. What makes the tenderloin so tender is because it is an unused muscle in the back.
The fact that the steak is still attached to the chine bone (spine bone) allows for a much more intense, almost sweet flavour in the meat. It is hand selected and aged a minimum of 21 days before it is then cut into generous16 oz portion with just the right amount of chine bone to bring out the flavour of the meat.
The master chefs at Quincy's grill the steak to perfection ensuring that all the flavour and juices of the meat are present.
